The original Pom Collins is a mocktail version of the Tom Collins. This spirited version redresses the balance and uses Old Tom gin to make what is essentially a long fruity gin sour. It has the basic Collins ingredients of gin, lime juice (the sour bit), grenadine syrup to offset the sour lime and carbonated water, all served over ice in a tall Collins glass.

John or Tom or Pom Collins aside, have some fun with this cocktail and don’t treat it too preciously.
Glass: Collins or highball
- 60ml Old Tom gin
- 30ml pomegranate juice
- 5ml grenadine
- 5ml freshly squeezed lime juice
- Soda water
- Add the first four ingredients to a shaker with ice.
- Shake until cold beads of condensation form on the outside of the shaker.
- Strain into a Collins glass filled with crushed ice.
- Top with soda water.
Garnish: Pomegranate seeds and a candy cane
